What I want to know is... why is it so hard to get chocolate cake with flour and eggs in NY restaurants? Why must it be regulated to diners or cafes? The whole notion of fine dining chocolate cake being flour-less is beyond me. Someone once told me that they felt Betty Crocker wouldn't be allowed in a fine dining establishment. I replied "Who's talking Betty Crocker? Use the finest cocoa, hand made creme for the filling, organic eggs, whatever. I don't expect my steak to be beef minus the beef. I shouldn't have to ask my server if the chocolate cake has eggs and flour in it when it's not listed as such and they bring me essentially fancy pudding."

I love the article. With an artist family of eight (six kids6-19), birthday cakes are a big deal and creative outlet. Cake making, one of those places the creative urge can erupt for anyone who wants to seize the opportunity. @Nicole, I live in Bedstuy, work in Soho and would greatly appreciate your list. If you could also include where good red velvet cake can be had as well, that would be great cause as of yet I'm not finding anything astounding from it other than the occasional good frosting.

@Jaai! I just saw chocolate layer cake on The Chocolate Room menu in Park Slope. I ordered ice cream this time but that cake looked like the real deal! Have you tried it?
